Have some more time on my hands, it's Easter Monday Holiday here in Australia. We don't normally have this day as a holiday in Manila unless it's declared by the President. But it here it's a very good break indeed. Had a busy Easter Sunday preparing dinner for some friends. I prepared some unusual dishes from the recipe books in my head.
We had roasted pork shoulder, which was done in a similar way to lechon. We also had my updated version of beef nilaga. I called it my Beef Nilaga ala Melbourne. I've already done some experiments back then with my nilaga inspired by dishes that we've tried in a seafood restaurant.
Oh well, Easter Monday is another day of rest but we'll probably go out for some fresh air.
